One of the questions I hear most frequently from people dieting is how to mix up their side dishes. You can only eat so many sides of steamed vegetables and salads. Generally my favorite way to mix things up is by roasting all types of veggies with a touch of olive oil and spices. I like almost any vegetable roasted and I find it really deepens and enhances the flavor. For this dish I wanted to take things even further and add some crunch with Panko breadcrumbs and of course, some cheese. Broccoli and cheddar? It's a no brainer.

Ingredients

US METRICS
  • 1 lb broccoli florets
  • 1 tbsp olive oil
  • 2 U garlic cloves, minced
  • 1/3 cup Panko breadcrumbs (leave out for low carb)
  • 1/4 cup reduced fat shredded cheddar cheese

Preheat the oven to 425 degrees.

Toss broccoli florets with olive oil, garlic, Panko breadcrumbs, salt, and pepper.

Roast in a single layer for 10 minutes or until tender.

Remove and toss with shredded cheddar cheese.
