I am not sure if I am the only one that had a mental block around cabbage for the first twenty five years of their lives. I blame it on my Irish heritage and only ever experiencing cabbage that was cooked to death, resembling something close to mush by the time it was served. However I am happy that I rediscovered cabbage because it has become one of my favorite vegetables. One of my favorite ways to eat it is roasted in the oven with some olive oil, salt, and pepper. It's best when it begins to char on the edges and get just tender. Yum.

  • 1 U green cabbage
  • 2 tbsp. olive oil
  • salt and pepper

Directions

  1. Preheat the oven to 400 degrees. Cut the cabbage into 1 inch rounds or wedges.
  2. Toss with the olive oil and season with salt and pepper. Place on a baking sheet.
  3. Bake for 30-40 minutes until tender and beginning to char.
