Roasting chicken never really gets old for me the house smells amazing, the flavor combinations are endless, the crispy skin (yum!), and the fact that I can use it all week make me a huge fan of this simple meal. Normally I choose to flavor my chicken with lemon and herbs, but last week I wanted something a little spicy and decided to stuff some cilantro, jalapeno, and garlic compound butter under the skins. The result was a delicious and easy roasted chicken that is full of flavor. Adjust the amount of garlic and jalapeno you use to fit your own personal tastes and make up a big batch so you have plenty of chicken leftover
