One of my favorite ways to dress up a simple chicken breast or piece of fish is to serve it with a yummy fresh vegetable relish or salsa. Many times when you see these recipes they contain lots of olive oil, but you can easily cut that back and lighten up the recipe significantly. This recipe was adapted from a Food Network recipe that called for 4 tbsp of olive oil, which I switched out for 1 tbsp and it still tastes great.

Ingredients

  • 2 U red peppers, finely diced
  • 1 U English cucumber, finely diced
  • 4 U Roma tomatoes, seeded and finely diced
  • 1/4 U red onion, finely diced
  • 1/8 cup fresh chopped parsley
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 U salt and freshly ground pepper
  • 1 tsp dried oregano

Directions

  1. In the bottom of a large bowl, whisk together the vinegar, olive oil, parsley, oregano, salt, and pepper.
  2. Add all of the veggies and toss to coat. This keeps well in an airtight container for 3-4 days.
