Ingredients

US METRICS
  • 1.5 cups cooked quinoa
  • 1/2 cup pumpkin puree
  • 2 U eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  • 1/8 tsp. salt

Combine all the ingredients. If desired add sweetener – Stevia, honey, or maple syrup will all work great.

Heat a griddle or nonstick pan over medium high heat. Spray with cooking spray. Add 1/4 cup per pancake and cook until firm. Flip over and cook for 3-4 minutes on the other side.
