It's Tuesday so you know all I can think about is what kind of tacos we should have for dinner. Although I am not normally one for themed meals, I can never refuse a taco so I take any and all reasons to enjoy them. This week I wanted to make a meatless option and needed something quick and easy that I could throw together without going to the grocery store.
Since I always have black beans and canned diced tomatoes at home, these were the perfect solution. The black beans are cooked in a combination of red onion, garlic, tomatoes, and loads of spices. If you like things spicy, you could throw in a chipotle pepper, poblano pepper, or jalapeno as well. Then about half of the beans are mashed to make them nice and creamy. Personally, I like that consistency that is kind of like thick refried beans, but you could also leave everything whole if you prefer. Stuffed in a warm corn tortilla with your favorite toppings, and dinner is ready in no time.

- 2 tsp olive oil
- 1/2 cup red onion, diced
- 2 U cloves garlic, minced
- 20 oz. canned black beans, rinsed and drained
- 14.5 oz. canned diced tomatoes, drained
- 2 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp pepper
- 1/4 tsp coriander
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp oregano
- 1/16 tsp cayenne pepper
