It's Tuesday so you know all I can think about is what kind of tacos we should have for dinner. Although I am not normally one for themed meals, I can never refuse a taco so I take any and all reasons to enjoy them. This week I wanted to make a meatless option and needed something quick and easy that I could throw together without going to the grocery store.

Since I always have black beans and canned diced tomatoes at home, these were the perfect solution. The black beans are cooked in a combination of red onion, garlic, tomatoes, and loads of spices. If you like things spicy, you could throw in a chipotle pepper, poblano pepper, or jalapeno as well. Then about half of the beans are mashed to make them nice and creamy. Personally, I like that consistency that is kind of like thick refried beans, but you could also leave everything whole if you prefer. Stuffed in a warm corn tortilla with your favorite toppings, and dinner is ready in no time.

Ingredients

  • 2 tsp olive oil
  • 1/2 cup red onion, diced
  • 2 U cloves garlic, minced
  • 20 oz. canned black beans, rinsed and drained
  • 14.5 oz. canned diced tomatoes, drained
  • 2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1/4 tsp coriander
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp oregano
  • 1/16 tsp cayenne pepper
  • 8 U corn tortillas

Directions

  1. Heat the olive oil over medium heat. Add the onion and garlic. Cook for 4-5 minutes until beginning to soften, stirring often.
  2. Add the beans, tomatoes, and all the spices. Cook for 5-7 minutes, stirring. Then use a masher or wooden spoon to mash about half the mixture. Cook for 8-10 minutes longer.
  3. Heat the tortillas and serve with about 1/4 cup black bean and tomato mixture. Top with your favorite toppings - avocado, light sour cream, cheese, lettuce, cilantro, onions, etc,
