I have been reading a lot of recipes online lately for simple cakes and cupcakes that simply combine store bought cake mix, instant pudding mix, and a liquid (usually water) that not only creates incredibly moist cupcakes due to the pudding mix, but also can create very low calorie and low fat cupcakes. And what better way to try out one of these recipes than with some pumpkin, which I can never seem to get enough of during this season. The result came out great moist cupcakes full of pumpkin flavor with some sweet cream cheese on top. If you do not want cupcakes quite as moist reduce the water to 1 cup and the pumpkin to 1 cup.

Ingredients

US METRICS
  • 18.25 oz. spice cake mix
  • 3.4 oz. sugar free vanilla pudding mix
  • 1 1/2 cups water
  • 14 oz. canned pumpkin
  • 2 tsp pumpkin pie spices
  • 4 oz reduced fat cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla

Preheat the oven to 350 degrees (or what the cake mix recommends)

In a small bowl, mix together the pumpkin and water. In another bowl combine the cake mix, pudding mix, and pumpkin pie spices.

Fold the wet ingredients into the dry ingredients and mix until just combined.

Bake according to package directions for cupcakes, likely between 25-30 minutes.

To make the glaze, whip together the cream cheese, powdered sugar, and vanilla. Then heat in the microwave for 30 seconds to warm up right before glazing.

Once the cupcakes have cooled, dip each cupcake top into the glaze. Let cool.
