It's strange, I actually don't really love pumpkin pie, but I love love love pumpkin pie flavored things. It may have something to do with the texture, which is a bit too gelatinous for me, kind of like flan, ick. But other than actual pumpkin pie, I am definitely on the pumpkin bandwagon. This quick and simple recipe mimics the flavors of pumpkin pie in a healthier yogurt dish. Top it with some nuts and flaxseeds or to really make things delicious, some crumbled low carb cookies or roasted cinnamon nuts.

  • 1 cup nonfat plain Greek yogurt
  • 1/2 cup canned pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 1 tsp Stevia
  • 2 tbsp. walnuts
  • 1 tbsp. flaxseeds

Directions

  1. Mix together the yogurt, pumpkin puree, pumpkin pie spice, and Stevia. Add the Stevia until you reach the sweetness you want.
