These burgers are seriously delicious. I made them over the weekend as a vegetarian option for a barbecue and vegetarians and meat eaters alike were scarfing them down. The avocado herb sauce is the perfect creamy topper for the mushrooms, red onions, tomatoes, and roasted red peppers. The mushrooms can be cooked in the oven or on the grill and I recommend using fresh mozzarella if you can find it. It makes the burgers really come alive.

Portabella Burgers with Avocado Herb Sauce

- 2 tsp. olive oil
- 4 U portabella mushrooms
- 1/2 U red onion, sliced thin
- 1/2 tsp. oregano
- 1/2 tsp. garlic powder
- 1 cup avocado
- 1/4 cup parsley
- 1/4 cup basil
- 1 U lemon (juice only)
- 1 cup roasted red pepper, drained and sliced
- 1 U tomato, sliced
- 4 U reduced calorie hamburger buns
- 2 oz. fresh mozzarella
Preheat the oven to 400 degrees. Brush the mushrooms with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Place on a prepared baking sheet along with the thin slices of red onion. I recommend spraying the onion with cooking spray so it doesn't stick. Bake for 10-12 minutes until mushrooms are tender. Onions should be softer but still have some crunch.
Meanwhile, use a food processor or blender and pulse together the avocado, parsley, basil, lemon juice, salt, and pepper to create the sauce.
Assemble the burgers by topping the mushroom with red onions, roasted red peppers, tomatoes, fresh mozzarella, and avocado sauce. I like to place the tomato, red peppers, and cheese on the burger and return it to the oven for 3-4 minutes until cheese melts.
