This Pomegranate, Apple, Fennel, and Goat Cheese Arugula Salad with a simple cider vinaigrette is full of flavor and makes the perfect starter or main dish with some added protein.
Lately I have been pretty obsessed with pomegranates. Since my sister in law has a tree in her backyard, our kitchen is overflowing with pomegranates. And since learning an easy way to remove all the seeds (check out the video below to see how), I have been adding them to everything. The slightly sweet, tart fruit is perfect for salads, yogurt, morning oats, and I love adding the arils to grains and rice bowls.
With that said, my favorite dish so far has been this salad. The combination of the pomegranate with apples, fennel, arugula, goat cheese, and sliced almonds is seriously yummy. And the simple apple cider and honey vinaigrette pulls everything together. We have been having it as a starter before our meals, but it also makes a delicious lunch or dinner with some grilled chicken or shrimp.

- 8 cups arugula
- 1 U pomegranate, seeded
- 1 U apple, sliced thin
- 1 U fennel bulb, sliced thin
- 1/2 U lemon, juice
- 1/4 cup sliced almonds
- 1/4 cup goat cheese
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 3/4 tsp pepper
- 1/2 tsp salt

Make the dressing by whisking together the olive oil, apple cider vinegar, honey, salt, pepper, and lemon juice.
Toss the ingredients together and season with salt and pepper if needed.
