Bring a pot of salted water to a boil.
Meanwhile add cooking spray to a saute pan and saute the spinach with salt, pepper, and red pepper until wilted on medium heat. Reduce the heat to low and cover with spinach with the ham and cheese slice. Cover and allow to continue to cook until cheese melts.
Reduce the boiling water to just a simmer. With a spoon, stir the boiling water to create a whirlpool in the pot. Once you have a whirlpool, crack the egg into the center. Allow to cook for 3-4 minutes until the white firms up. While the egg is cooking, move the spinach, ham, and cheese to a plate. Remove from the egg from the water using a slotted spoon and enjoy!
