Oh how I love pina coladas. Creamy coconut, sweet and slight tart pineapple - it's a pretty magical combo. So when I was looking for smoothie inspiration last week, a pina colada smoothie sounded like the perfect idea. To lighten things up, I like to use unsweetened coconut milk (not the canned kind), which cuts a lot of the calories. Then to make sure we won't be hungry an hour later, we are going to add some whole grain oats, chia seeds, and nonfat Greek yogurt. Depending on how sweet you like things, you might want to add a touch of Stevia or honey, but I think it's sweet enough like this.

Ingredients

  • 1/4 cup rolled oats
  • 1 tbsp. chia seeds
  • 1 cup unsweetened coconut milk
  • 1/3 cup nonfat Greek yogurt
  • 1 cup fresh or frozen pineapple
  • 1/2 tsp. vanilla extract
  • 1/2 cup ice

Directions

  1. Add the oats and chia seeds to the blender and pulse a few times until they form a flour like consistency.
  2. Add the remaining ingredients and blend until smooth.
