Goat cheese, red peppers, and a slightly spicy poblano pepper combine to make the most delicious, and surprisingly healthy, Pepper and Goat Cheese Fritatta.
Goat cheese seriously makes everything taste better, don't you agree? Adding just a little bit of goat cheese to frittata takes it from a simple egg dish to something really delicious. And paired with a sweet red bell pepper and slightly spicy poblano pepper, it's magical. I make this frittata all the time and love it for breakfast, lunch, or dinner. It tastes great warm or cold making it versatile for almost any meal or any time of year.
Pepper and Goat Cheese Frittata

- 2 tsp. olive oil
- 1 U red pepper, diced
- 1 U poblano pepper, diced
- 1/2 U red onion, diced
- 2 U garlic cloves, minced
- 8 U eggs
- 1 tsp. oregano
- Salt and pepper
- 1/2 cup crumbled goat cheese

Preheat the broiler.
Heat the olive oil over medium high heat. Add the red pepper, poblano pepper, and onion. Cook for 5-7 minutes until tender. Add the garlic and cook for 1 minute until fragrant.
Meanwhile whisk the eggs with the oregano, salt, and pepper.
Pour the eggs over the top of the vegetables. Let cook, lifting the edges of the frittata to allow the uncooked egg to flow underneath. Continue to do this for 3-4 minutes until the bottom is light brown. Crumble the goat cheese on top of the eggs and broil in the oven for 3-4 minutes until cheese melts and top of the frittata is puffy and golden brown.
