Spaghetti squash is a constant in my home. We eat it at least once a week as a pasta substitute or side dish. Most often, I cook in the microwave to speed things up and then just add Parmesan, lots of black pepper, and some olive oil or butter. Simple, filling, and oh so good.

  • 1 U spaghetti squash
  • 1 tbsp. butter
  • 1/2 cup Parmesan cheese
  • Salt and pepper

Instructions

  1. Pierce a spaghetti squash all over with a knife. Microwave for 10-15 minutes until tender.
  2. Carefully cut in half, remove seeds, and scrape out squash.
  3. Toss with butter, cheese, pepper, and salt.
