Paleo Pumpkin Pancakes

Pancakes are one of my favorite breakfast treats but all too often I find myself hungry just a couple hours later since they generally lack protein and fiber. Normally I combat that by making either Oatmeal or Peanut Butter Banana Protein Pancakes that pack more of a nutritional punch with lots of added fiber and protein. However lately I have been craving all things pumpkin so I decided to adapt the recipe a bit and use pumpkin puree and spices. I also wanted something I could make for some friends on the Paleo diet so I left out of the oatmeal. The resulting pancake is a bit like a crepe, full of pumpkin flavor, and both low carb and Paleo friendly.
