I make overnight oats on a pretty regular basis, especially when I know I am going to have a busy week and be tempted by breakfast sandwich drive-throughs. However I have always struggled a bit with overnight steel cut oats because I can't decide if I like the extra chewy texture you get when they aren't cooked at all. So although it takes a but of extra work, I have starting cooking the oats the night before. All it takes is one minute of cooking to completely transform the way the steel cut oats come out. They will be much softer than if you just soaked them and this extra step makes all the different in my opinion. This version brings together the flavors of chai tea with lots of spice.

Ingredients

US METRICS
  • 3/4 cup steel cut oats
  • 3 cup unsweetened almond milk or skim milk
  • 1/16 tsp. salt
  • 3 tbsp. chia seeds
  • 3 tsp. maple syrup
  • 1/4 tsp. cinnamon
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. ground ginger
  • 1/4 tsp. nutmeg
  • 1/16 tsp. cardamom

Bring the almond milk to a boil. Add the steel cuts oats and salt once boiling. Stir and let the oats cook for one minute then turn off the heat.

Stir in the chia seeds, maple syrup, and spices.

Cover and let sit overnight. They do not need to be refrigerated but you can refrigerate if you feel more comfortable.

In the morning, divide into three servings. It can be eaten warm or cold depending on your preference.
