Oven Roasted Tomatoes

Preheat the oven to 225 degrees.
Cut your cherry tomatoes in half and add to a bowl. Add olive oil, salt, and pepper. Toss to coat.
Spread out onto a large baking sheet, with the inside of the tomato facing up. Add the thyme sprigs on top. Cook for 3 hours or until the tomatoes are shriveled and dry, with just a little juice remaining. Enjoy!
