My family requests this one pan sausage meals weekly and I am more than happy to oblige since they are easy, healthy, and allow me to clean out the fridge of any leftovers veggies. Normally I wouldn't share a specific recipe for this but we loved the combination of sausage, sweet potatoes, green beans, and spices so much that I just had to post it. One note, in terms of vegetarian sausage, there are many different brands and the nutritional info can vary quite a bit. I normally look for sausages around 180 calories without too much added sugar.

Ingredients

US METRICS
  • 4 U vegetarian sausages
  • 1 tbsp. olive oil
  • 3 cups sweet potatoes, diced
  • 1 lb. green beans
  • 1 U red onion, sliced
  • 1/2 tsp. cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. oregano
  • Salt and pepper

Preheat the oven to 425 degrees.

Toss the sweet potatoes, green beans, and red onion with the olive oil and spices. Spread on a baking sheet in one layer. Cover with foil for easier clean up. Nestle the sausage among the veggies.

Bake for 25-30 minutes until sweet potatoes are tender. Consider serving with whole grain mustard.
