Oatmeal Chocolate Chip Cookies (with Beans!)

- 1 cup rolled oats
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/2 cup canned white beans, saving canning liquid
- 1/4 cup brown sugar
- 1/4 cup unsweetened applesauce
- 1/2 tsp vanilla extract
- 1/2 cup semi sweet chocolate chips
- 1 U Pinch of salt
Preheat your oven to 350 degrees.
In a large mixing bowl, combine the flour, salt,baking powder, baking soda, and cinnamon making sure to remove any chunks.
Pour 3/4 cup of the rolled oats into a food processor and pulse until the the oats become crumbly. Then add them to the flour mixture and combine.
Add the beans, 1 tbsp canning liquid vanilla, applesauce, and sugar to the food processor and blend well. Combine this mixture with the flour and mix together.
Fold in the chocolate chips, remaining oats, and remaining canning liquid in the dough. Drop 1 tablespoon of dough onto a baking sheet that has been sprayed with cooking spray and cook for 12-15 minutes. Enjoy!
