This recipe! If you have just five minutes, you have time to make a healthy, tasty, portable oat cake that you can grab as you are running out the door. It's packed with blueberries, bananas, and oatmeal with just a touch of brown sugar, so it's a breakfast you can feel good about. To be honest, the first time I saw this recipe I didn't really believe it would taste good or work. I couldn't imagine that the bananas and blueberries would provide enough moisture for the oats. But low and behold, it came out delicious and is quickly become one of my go-to breakfasts on busy mornings. I usually smear some almond butter on top and eat it as driving to work.
Microwave Blueberry Banana Oat Cakes

Spray a bowl with cooking spray. Mash the banana in the bottom. Stir in the oats, chia seeds, brown sugar, and cinnamon. The gently fold in the blueberries.
Microwave for 2.5-3 minutes. It's down when it looks firm and there are some small holes on the top, kind of like before you flip a pancake. Let rest 2-3 minutes before eating so it can continue to firm up.
