So here goes - rutabaga! It's probably a new ingredient to many but it's a great one to get to know, especially if you look for lower carb recipes and side dishes. Let's start with what it is. A rutabaga is basically a type of turnip and many describe it as a cross between cabbage and turnip. It's a root vegetable that can be prepared similar or potatoes - you can roast it, puree it, mash it, and even shred or julienne it and eat it raw. One typical dish, especially in Sweden and Norway, is this mashed carrot and rutabaga dish. The carrots add lots of natural sweetness which balances out the dish nicely. I know it sounds a bit scary, but try it! It's really delicious and will become a side dish you use often.

  • 3/4 lb. rutabaga, peeled and chopped
  • 3/4 lb. carrots, peeled and chopped
  • 1 tbsp. butter (or ghee)
  • 2 tbsp. nonfat milk (or cooking liquid)
  • Salt and pepper

Directions

  1. Bring a large pot of water to a boil. Add the rutabaga and cook for 10 minutes. Add the carrots and continue boiling for around 20 minutes until everything is very tender.
  2. Drain. Using a hand masher (or blender), add the butter and milk/cooking liquid. Mash to desired consistency and season with salt and pepper.
