I love, love, love the mini sorbets that come in their own fruit holder, however I do not love their $9/pack price tag at my local supermarket, or how hard they are to find. I knew there must be a way to create my own so I started researching and found a number of recipes for homemade sorbettos in fruit cups. I ended up using a bunch of ideas from various websites to create my own version, one that didn’t require an ice cream maker and kept it simple. This recipe combines three simple ingredients fruit, sugar, and lime juice, and makes an adorable, fancy, delicious dessert. You could use any fruit and it would work great. For weight watcher users, this is a 0 point recipe since it is just fruit and Splenda but the recipe calculator may give you a different result.

Ingredients

US METRICS
  • 1 U mango
  • 1/4 cup water
  • 1/4 cup Splenda sugar blend (Stevia, or other sweetener, leave this out for Paleo)
  • 1 tbsp. lime juice

Carefully cut the mangoes in half, cutting out the husk. Scoop out the mango carefully using a spoon and place the mango shells into the freezer on a baking sheet or plate.

Make your simple syrup by combining hot water and Splenda. Add the simple syrup, lime juice, and mangoes to a blender and puree until smooth.

Pour the mixture into a bowl and place in the freezer for one hour until it begins to freeze but is still soft enough to scoop.

Scoop the mango ice into the mango cups and freeze for an additional 2 hours. Eat right away or wrap in plastic wrap to save for later.
