There is nothing better than a cold popsicle on a hot day and for me this also means sticky fingers and hands, but it’s all worth it for that first cold bite. These popsicles are simple and delicious and you can make them with almost any fruit. I used mango, light coconut milk, a little Splenda, and some chile thrown in a blender, poured into your favorite popsicle molds, and in a couple of hours, you have the perfect treat for a hot day.

Ingredients

US METRICS
  • 2 U mangoes, peeled and cut into bite sized pieces
  • 1/2 cup canned light coconut milk
  • 1/8 cup Splenda sugar blend
  • 1 tbsp chili powder (or to taste, I used Tajin for fruit)

Add all of the ingredients to a blender.

Pour everything into popsicle molds. Freeze for 2-3 hours minimum. Enjoy!
