Sometimes a taco salad really is the best thing ever. The crunchy veggies, spicy ground meat, and salty cheese make the perfect combination in my opinion and it's a quick and easy dinner I could eat almost any day of the week. Normally I like to bake up some tortillas to sprinkle on top, but in this version we leave them out to keep things lower carb. For Paleo dieters or folks following clean eating diets, just leave off the cheese instead and perhaps replace it with some sliced avocado.

Ingredients

US METRICS
  • 1.67 lb 95% lean ground beef
  • 3/4 tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • 1 tsp cumin
  • 1/8 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2/3 cup water
  • 6 cups lettuce
  • 2 U tomatoes, chopped
  • 1 U cucumber, chopped
  • 1/4 cup cilantro, chopped
  • 4 U green onions, chopped
  • 8 tbsp reduced fat shredded cheddar cheese

Brown the beef in a skillet over medium high heat.

Meanwhile whisk together all of the spices to make your taco seasoning. Once the beef is browned, add the seasoning to the beef along with 2/3 cup water. Simmer for five minutes.

Toss everything together or create each individual salads.
