When I am focusing on a lower carb diet, I have to be honest, low carb tortillas and wraps save me. From wraps, tacos, burritos, pizzas, and quesadillas - I use them all the time. However, since they do contain some carbs and are processed, I try to limit them to once a day. In today's recipe, the low carb wrap reaches ultimate deliciousness with the addition of a spinach artichoke inspiring filling with turkey for added protein.

Ingredients

US METRICS
  • 2 oz. deli turkey breast (or vegetarian deli meat/chick'n strips)
  • 1 tbsp. light cream cheese
  • 1/4 cup canned artichoke hearts, chopped
  • 1/2 cups fresh spinach
  • 3 tbsp. shredded part skim mozzarella cheese
  • Salt and pepper

Instructions

  1. Microwave the cream cheese for about 30 seconds until soft.
  2. Mix in the spinach, artichoke hearts, cheese, salt, and pepper.
  3. Spread the mixture in the low carb wrap. Layer in the turkey. Fold over to create the quesadilla.
  4. Grill in a skillet coated with non-stick cooking spray until warm and toasty.
