Picadillo is a Latin dish that normally has ground beef or turkey, potatoes, tomato sauce, and lots of spices. It's traditionally served with rice or wrapped up in tortillas as tacos. However to make it lower carb, we are going to eliminate the potatoes and use extra ground turkey. As a note, many picadillo dishes use green olives and not quite as much heat so you can adjust the recipe to your preferences. Personally I don't love green olives in the dish so I leave them out and I am always looking to add more spice, so I love the chipotles and jalapenos in the dish. And sometimes I add some turnips or rutabagas as well (like in the photo) to mimic the potatoes used in the traditional Mexican version.

Ingredients

  • 1 U onion, diced
  • 2 lbs. 93% lean ground turkey
  • 4 U cloves garlic, minced
  • 2 U carrots, diced
  • 1 U green pepper, diced
  • 1 U red pepper, diced
  • 1 tsp. salt
  • 2 U jalapenos, whole (or to taste)
  • 18 oz. canned tomato sauce
  • 2 tbsp. chipotle peppers in adobo
  • 1 tsp. cumin
  • 1/2 tsp. oregano
  • 1 U bay leaf
  • 1/2 tsp. black pepper

Directions

  1. Brown the turkey and onion in a skillet until no longer pink. In the last 1 minute of cooking, add the garlic.
  2. Meanwhile, blend together the tomato sauce and chipotles, adding the chipotle peppers one at a time until it reaches your desired spice level.
  3. Add the turkey, remaining ingredients, and tomato sauce to the slow cooker. Cook on high for 4 hours or low for 8 hours. The jalapenos are added whole for flavor.
