To be honest, Shepard's Pie has never been my favorite meal but it seems that every other day I hear about how much people love it. For that reason, I make it every once and awhile, but usually go for this shortcut version that eliminates layering everything together and baking it. It's just not a step I always have time for on a busy weeknight and to me it tastes pretty much the same if you just layer everything together in a bowl. To lighten everything up, I like to pair it with a creamy cauliflower mash. This freezes great so it's also great to make and freeze in individual portions for future meals.

Ingredients

  • 1 lb 95% lean ground beef
  • 1 tsp olive oil
  • 1 cup onion, diced
  • 2 U celery ribs, chopped
  • 2 U cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp cornstarch (or arrowroot or flour)
  • 8 oz frozen mixed vegetables (low carb mix)
  • 3/4 cup low sodium chicken broth (or beef)
  • 1 tsp Worcestershire sauce
  • 1/2 tsp. pepper
  • 1/2 tsp thyme
  • 1/2 tsp. rosemary
  • salt and pepper

Directions

  1. Meanwhile, brown the turkey in a skillet until no longer pink. Season with salt and pepper. Set aside turkey.
  2. Add the olive oil to the skillet over medium heat. Add the onion and celery. Cook for 5-8 minutes until tender. Add the garlic and mushrooms. Cook for 5 minutes. Stir in the cornstarch.
  3. Add the frozen vegetables, chicken or beef broth, Worcestershire sauce, thyme, and rosemary. Stir together and season with salt and pepper. Simmer for 10 minutes.
  4. Layer with your favorite mash - cauliflower, sweet potato, potato, or butternut squash.
