Sausage bakes are one of my favorite one dish meals. Essentially all you have to do is load up a baking dish with a bunch of vegetables, some olive oil, and some spices. Then lay the sausage on top and bake. The sausages will flavor the vegetables underneath. You can use any vegetables but heartier vegetables will hold up better, especially if starting with raw sausage, which I recommend for more flavor.

Ingredients

  • 4 U chicken sausages
  • 1 lb celeriac, peeled and chopped
  • 2 U leeks, chopped
  • 1 U small cabbage, cut into 8 wedges
  • 1 U apple, chopped
  • 2 tsp olive oil
  • 1 tsp dried thyme
  • salt and pepper

Directions

  1. Preheat the oven to 400 degrees.
  2. Toss together the celeriac, cabbage, leeks, apples, thyme, salt, pepper, and olive oil in a baking dish.
  3. Layer the sausages on top. I kept mine whole but you could also slice them.
  4. Bake for 30 minutes or until potatoes are tender. Cooking time may vary slightly.
