This is the season for pumpkin and I am definitely fully on the bandwagon. Since I can't seem to stop myself from adding pumpkin to almost everything, it's no surprise it made it into my cream cheese this morning. Normally I mash in some fresh berries or spices, but with leftover pumpkin, this was the perfect option to liven up my breakfast.
Low Carb Pumpkin Cream Cheese

Mix or whip together all the ingredients until smooth (a hand blender works great). Store in the fridge.
