Low Carb Peanut Butter Microwave Muffin

A healthy, gluten free, low carb, and Paleo friendly Microwave Peanut Butter Muffin that's ready in under five minutes!
This muffin has been my favorite quick breakfast and healthy snack lately. Not only is it packed with protein, healthy fats, and fiber - it tastes great and is a perfect low carb replacement to your morning muffin. And it's ready in under five minuets, which makes it the ideal thing to make on a busy morning or for a quick post workout snack. I like to make mine with peanut butter but you could use any nut butter you like. You could also usee honey or maple syrup instead of the stevia or even half a mashed banana. Top with yogurt, fresh fruit, or some extra melted nut butter - delicious!

- 1 tbsp. peanut butter
- 1 U egg
- 1/4 tsp baking powder
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla extract
- 1/16 tsp. Stevia (or more to taste)
- 5 tbsp. unsweetened almond milk

Instructions
(Hide Photos)Spray a mug or ramekin with cooking spray. Add the coconut flour and flaxseed meal to the mug. Mix with a fork to break up any lumps. Stir in the almond milk, breaking up any lumps. Add the egg and remaining ingredients. Stir well. You can microwave the peanut butter for a few seconds before stirring in if it is hard. through.
