Low Carb Pastrami Hash and Eggs Recipe
It's hard to beat a really good pastrami sandwich or hash, but unfortunately many of them easily clock in at between 600-1000 calories, not too mention the potatoes and bread. So when I am craving pastrami I usually satisfy my cravings with the 98% lean pastrami from the deli, which although not quite the real thing, is pretty darn tasty. In this recipe it's paired with shredded summer squash, onions, and peppers for a quick and delicious breakfast (or dinner!) hash that doesn't take very much work. Depending on your dietary needs, you could also use full fat pastrami in this recipe but I think the lean version tastes great.
