Have y'all had succotash before? It's a bit of an old school salad/side dish normally made with corn, lima beans, and tomatoes.  This low carb version uses the traditional lime beans, which are naturally lower in carbs, and uses edamame to replace the corn.  To that we add a red pepper, tomatoes, and a touch of lemon and basil for a delicious and fresh side dish.

Ingredients

  • 1 tbsp. butter
  • 1 U sweet onion, diced
  • 1 U red pepper, seeded and diced
  • 1 cup canned lima bean, defrosted
  • 1/2 cup shelled edamame
  • 1 cup cherry tomatoes, halved
  • 1 tbsp. lemon juice
  • 1/4 cup basil
  • Salt and pepper

Directions

  1. Melt the butter in a medium hot skillet. Add the onion and red pepper. Cook for 6-8 minutes until tender.
  2. Add the lime beans and edamame. Cook for 4-5 minutes until just tender.
  3. Remove from heat and toss in the tomatoes, lemon juice, basil, salt, and pepper.
