Low Carb Egg White, Tomato, & Avocado Wrap

Sometimes the simplest combinations make the most delicious meals. Panera makes a delicious breakfast sandwich and all it has is avocado, egg white, tomatoes, and spinach. Theirs is served on a toasted sprouted roll, which although really delicious, is pretty high in calories and carbs. This at home version solves both those problems by using a low carb wrap. It's also ready in under five minutes, which makes it perfect for a busy morning.

- 2 U egg whites
- 1 U Flatout Light wrap
- 1/4 cup tomatoes
- 1/4 cup spinach leaves
- 1/4 U avocado
- 2 tbsp. part skim shredded mozzarella

Instructions
(Hide Photos)Spray a mug or bowl with cooking spray. Add the eggs whites and cook for 1-1.5 minutes until cooked through. Since egg whites can pop a little in the microwave, you may want to cover the bowl with a paper towel.
Create the wrap by layering the eggs, tomato, spinach, avocado, and mozzarella.
If time permits, grill/panini the wrap before serving.
