We eat burgers or some type of sandwich in my house almost every week. It's quick, easy, and everyone is always happy about a delicious burger. One of my favorite burgers twists is a crispy shrimp version and when I had a gluten free friend over last week, I needed to mix up the recipe to eliminate the breadcrumbs. I ended up using almond meal and loved the nuttiness it brought to the burgers.

Ingredients

  • 1.25 lbs raw shrimp, peeled and deveined
  • 2 U garlic cloves
  • 1/4 cup cilantro
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/3 cup almond meal
  • 1 U egg, lightly beaten
  • 1 tbsp vegetable oil

Directions

  1. Take half the shrimp and coarsely chop it. Add it to a bowl. Take the other half and add it to a food processor with the garlic and cilantro. Pulse to create a chunky paste. Mix in with the chopped shrimp.
  2. Add the salt, paprika, onion powder, cayenne pepper, almond meal, and egg. Mix until just combine.
  3. Divide into patties.
  4. Heat a skillet over medium high heat with the vegetable oil. Add the burgers and cook for 3-4 minutes on each side. Serve on a roll as a burger, wrapped in lettuce, or as a burger bowl.
