Looking for a quick and easy dinner that everyone will love? Look no further than these crispy honey mustard pork chops made low carb with almond flour. The outside crisps up nice and brown and the pork stays tender. I love the slight sweetness from the honey mustard but you could also choose to use Dijon or whole grain mustard instead. These keep pretty well and reheat great in the toaster oven so consider making a double batch and use the leftovers in salads.

  • 1.33 lb. boneless, lean pork chops
  • 1 U egg
  • 1 U egg white
  • 1 tbsp. honey mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup nonfat milk
  • 1/4 cup almond flour
  • 1/2 tsp. oregano
  • 1/2 tsp. dried rosemary
  • 1 tbsp. vegetable oil

Directions

  1. Place the pork between two sheets of plastic wrap and pound until twice the size. Season with salt and pepper.
  2. Whisk together the egg, egg white, mustard, salt, pepper, and milk. Spread the almond flour on a shallow dish egg and then into the almond flour.
  3. Heat the vegetable oil over medium high heat. Add the pork and cook for 3-4 minutes on each side or until cooked through.
