Place the pork between two sheets of plastic wrap and pound until twice the size. Season with salt and pepper.
Whisk together the egg, egg white, mustard, salt, pepper, and milk. Spread the almond flour on a shallow dish egg and then into the almond flour.
Heat the vegetable oil over medium high heat. Add the pork and cook for 3-4 minutes on each side or until cooked through.
