Moist chicken that has been soaked in buttermilk and then is pan fried to create a crispy outside - dinner perfection in my book. Soaking the chicken in the buttermilk adds flavor and ensures that the chicken stays nice and moist when its cooked. Then the almond flour adds a nice crispy coating that is reminiscent of traditional buttermilk fried chicken without all the fat.

Ingredients

  • 1.33 lbs boneless skinless chicken breast
  • 1 cup low fat buttermilk
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/3 cup almond flour
  • salt and pepper
  • 1.5 tbsp vegetable oil

Directions

  1. Marinate the chicken in the buttermilk, onion powder, garlic powder, and salt overnight. If you like spice, you could add some hot sauce as well.
  2. When ready to cook, preheat the oven to 425 degrees.
  3. Season the almond flour with salt and pepper. Remove chicken from marinade letting excess drip off. Press into the flour on both sides. Set aside.
  4. Heat an oven safe skillet over medium high heat with the oil. Add the chicken and brown on both sides for 3-4 minutes.
  5. Place pan in the oven to finish the chicken, about 10 minutes,
