I have always had a weakness for carrot muffins of any kind.  Unfortunately when I am trying to eat a lower carb diet, I feel like I have to avoid muffins completely.  However with almond and coconut flours, it is now possible to make some pretty delicious muffins without so many carbs.  These muffins are packed with good for you ingredients like almond flour, coconut flour, apples, carrots, and coconut oil.  They also have great staying power with five grams of fiber per muffin and only 9 grams of net carbs.

Ingredients

US METRICS
  • 1/4 cup coconut flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • 3 U eggs
  • 1/4 cup coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1 tsp Stevia (preferable liquid Stevia, use honey for Paleo)
  • 2 U carrots, peeled and grated
  • 2 U apples, grated

Preheat the oven to 375. Line a muffin with liners or spray with cooking spray. Pour into the muffin, using about 1/2 cup batter per muffin. Bake for 25-30 minutes until cooked through.

Whisk together both flours, baking soda, cinnamon, nutmeg, and salt. In another bowl, whisk together the eggs, coconut oil, applesauce, vanilla extract, and Stevia. Stir this into the flour mixture until well combined. Fold in the carrots and apples. It is a thick batter.

Pour into the muffin tin. Bake for 25-30 minutes until cooked through.
