These low carb Breakfast Tacos stuffed with seasoned eggs and avocado make everything better and it is all made in the microwave in under five minutes.
I never need a special occasion to make tacos and we eat them at least twice a week in some form. At least once it's a traditional dinner recipe but the rest of the time it is usually in yummy breakfast tacos or lunch tacos with leftovers. Since mornings can be hectic, I love making these five minute breakfast tacos. The eggs are seasoned with some cumin and oregano and then stuffed into a nice warm low carb tortilla with avocado and salsa. Usually I add some veggies as well - diced bell peppers, cherry tomatoes, spinach, or zucchini are some of my favorites.

Spray a microwave safe dish with cooking spray. Whisk together the eggs, cumin, oregano salt, and pepper. If your are adding extra veggies stir them in as well. If your veggies are raw, you can microwave them first for 1-2 minutes until just tender.
Microwave the eggs for 1 minute. Remove and scramble with your fork. Return to microwave for 1-1.5 minutes until cooked through.
Warm the tortillas. I prefer to do this directly on the burner on the stove so they toast a bit but you could also microwave them for 10-15 seconds.
Assemble your tacos with your favorite salsa, avocado, and any additional toppings.
