You know what I absolutely love? Well besides a spontaneous happy hour, hiking mid-week, and anything that involves chocolate and bananas, that fabulous peanut dressing that you can find at many Asian restaurants. I love it. Even when all it comes with is lettuce. This is a quick, easy, and delicious version of your favorite Asian peanut dressing which I adapted ever so slightly from this month’s Cooking Light. They served it with a yummy tofu salad. I had mine with my own spin on an Asian salad complete with cabbage, edamame, red onion, jalapenos, cucumbers, red pepper, sprouts, and black sesame seeds. A perfect lunch. Also makes a killer dipping sauce, just FYI.

Ingredients

US METRICS
  • 1/4 cup reduced fat peanut butter
  • 4 tbsp lime juice
  • 2 tbsp hot water
  • 2 tsp green curry paste
  • 1 tbsp low sodium soy sauce
  • 2 tsp brown sugar
  • 1/2 tbsp. fresh ginger, minced
  • 1/4 tsp salt if needed

Instructions

  1. Whisk together all the ingredients in a bowl until well combined. Serve over an Asian inspired salad, over cold rice noodles with veggies, or over tofu.
