You know what I absolutely love? Well besides a spontaneous happy hour, hiking mid-week, and anything that involves chocolate and bananas, that fabulous peanut dressing that you can find at many Asian restaurants. I love it. Even when all it comes with is lettuce. This is a quick, easy, and delicious version of your favorite Asian peanut dressing which I adapted ever so slightly from this month’s Cooking Light. They served it with a yummy tofu salad. I had mine with my own spin on an Asian salad complete with cabbage, edamame, red onion, jalapenos, cucumbers, red pepper, sprouts, and black sesame seeds. A perfect lunch.
Also makes a killer dipping sauce, just FYI.
