A couple of weeks back I found fresh chickpeas at the market for the first time. Naturally I loaded up on some and took them home only to stare at them for days. I had no idea what to do with a fresh chickpea. After some research, it turns out you can eat them raw, right out of the shell and they are pretty delicious. Sort of like edamame. Since then I have been adding them to salads instead of canned beans and been really happy with the results, especially in this salad with fresh summer corn and nectarines.

I prefer fresh chickpeas to lime beans but since they are hard to find the recipe includes canned lima beans which are much more accessible.
