A couple of weeks back I found fresh chickpeas at the market for the first time. Naturally I loaded up on some and took them home only to stare at them for days. I had no idea what to do with a fresh chickpea. After some research, it turns out you can eat them raw, right out of the shell and they are pretty delicious. Sort of like edamame. Since then I have been adding them to salads instead of canned beans and been really happy with the results, especially in this salad with fresh summer corn and nectarines.

Ingredients

  • 1/3 cup lime juice
  • 1 tsp lime zest
  • 1 U jalapeno, seeded and minced
  • 2 tbsp honey
  • 1/2 tsp cumin
  • 1/2 tsp kosher salt
  • 2 U nectarines, sliced
  • 4 U radishes, sliced
  • 4 U green onions, diced
  • 2 U ears corn, cut off the cob
  • 1/3 cup cilantro
  • 2 tbsp basil
  • 2 U red peppers, chopped
  • 1 cup canned lima beans, drained and rinsed

Directions

  1. Whisk together the lime juice, lime zest, jalapeno, honey, cumin, and salt to create the dressing.
  2. Toss with the vegetables and let rest for 15 minutes before serving.

Notes

I prefer fresh chickpeas to lime beans but since they are hard to find the recipe includes canned lima beans which are much more accessible.
