I can't say enough good things about this ham and cheese pizza with spinach and fresh pears. I made it for a brunch last weekend and the entire thing was gone before we even sat down to eat. Between the salty ham, earthy spinach, melted cheese, and crunch of the fresh pear on top - there really isn't any better combination. For making the pizza, you can start with any thin crust pizza shell, flatbread, or even a low carb wrap or pita. That is topped with a very thin layer of marinara sauce, you could also use crushed or diced tomatoes. Then comes the ham, spinach, and cheese. If you wanted to mix things up, you could use turkey instead or replace the spinach with kale of chopped broccoli. And you could definitely make a detour with the cheese and substitute cheddar, feta, Gouda, or Swiss. The top everything with a freshly cut pear or apple to add some natural sweetness and crunch. So good.

  • 1 U Boboli whole wheat thin crust pizza (or other thin pizza crust)
  • 1/2 cup marinara sauce (no sugar added)
  • 4 oz. lean boneless ham, chopped
  • 1/2 cup frozen chopped spinach, defrosted and drained
  • 1 U garlic clove, minced
  • 1 cup part skim shredded mozzarella
  • Salt and pepper
  • 1/2 U pear, julienned

Directions

  1. Preheat the oven to 500 degrees.
  2. Spread the pizza with marinara sauce. Top with ham, spinach, garlic, mozzarella, salt, and pepper. Place in the oven and bake for 8-10 minutes until crust is beginning to brown and cheese is melted.
  3. Top with sliced pears.
