Nothing is better than picnics. Picnics with loved ones, dear friends, sunshine, and delicious food. And maybe wine. Well, definitely wine. This meal is inspired by one such picnic where I indulged on delicious, fried Argentinian empanadas stuffed with corn, ham, and cheesy goodness stuffed inside a flaky crust. This simple quiche recipe brings me back to those empanadas and more importantly reminds me of that lovely picnic. Don’t be afraid of putting corn in the quiche even though it seems strange – it’s delicious. Then cut up your quiche and head outside if you can. It seems like a great day for picnics.

Ingredients

US METRICS
  • 2 U eggs
  • 3 U egg whites
  • 1/2 cup canned corn, drained and rinsed
  • 1/4 cup onion, diced
  • 1/2 cup nonfat milk
  • Salt and pepper to taste
  • 1/3 cup shredded part skim mozzarella cheese (or gruyere cheese)
  • 4 oz. boneless lean ham, chopped
  • 1 U refrigerated or frozen pie crust

Preheat the oven to 375 degrees and place the frozen pie crust on the counter.

Spray a saute pan with cooking spray and saute the onions until they begin to become translucent. Remove from heat and let them cool.

In a large mixing bowl, whisk together the whole eggs, egg white, milk, salt, and pepper until frothy. Stir in the corn, ham, and cheese.

Pour the egg mixture into the pie crust. Bake according to the directions on the pie crust likely 20-25 minutes until the center is firm.

I've made this several times. While the original recipe is terrific, I've also switched it up a couple times with things like feta, extra sauteed onion and peas. Tasty and fast prep. A staple for us!
