This is my new favorite summer meal. I head to the farmer's market in the morning and stock up on whatever veggies look fresh and delicious. In this case, I got zucchini, summer squash, eggplant, and beautiful summer tomatoes. Then everything is thrown on the grill along with some yummy vegetarian sausages to create a simple, flavorful, and healthy meal. Sometimes I top everything with some crumbled goat cheese, fresh mozzarella, or salty feta to finish things off.
Grilled Vegetarian Sausages and Vegetables

Toss the vegetables with the olive oil, salt, and pepper.
Cook the sausages on the grill until fully cooked or warmed through. They take about 3-4 minutes per side.
Cook the vegetables on the grill or in a grill basket.They should take 3-4 minutes per side. Roughly chop.
Drizzle with vegetables with balsamic vinegar and toss with fresh basil. Season with salt and pepper as needed. Serve alongside sausages.
