The summer is all about grilling and I am always on the look out for delicious marinades, especially for chicken breast.  In the past, I often made a simple marinade with mustard, lemon juice, spices, and honey but I wanted to create a sugar free version with a little more zest.  To do that I opted for lime juice, whole grain musatrd, garlic, cilantro, and paprika.  You could also add some chili powder or red pepper flakes if you like things spicy.  Marinating the chicken in the citrus juice ensures it will stay nice and tender on the grill and packs it with flavor.  Make up a double or triple batch and use leftovers over greens or paired with greek yogurt for a zingy chicken salad.

  • 1.33 lbs. boneless skinless chicken breast, cut into strips
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup whole grain mustard
  • 1 U garlic clove, minced
  • 1 tbsp. olive oil
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

  1. Combine the lime juice, cilantro, mustard, garlic, olive oil, paprika, salt, and pepper. Add the chicken and marinate for at least 4 hours or overnight. If you like a sweeter marinade consider adding Stevia.
  2. Preheat grill or grill pan. Remove chicken from marinade letting excess drip off. Grill on each for 4-5 minutes or until cooked through.
  3. For baking: Preheat the oven to 425. Place on a prepared baking sheet. Bake for 18-20 minutes, flipping over once, or until cooked through. Cooking time can vary based on thickness.
