This simple Grilled Lemon Pepper Zucchini is packed with flavor and will quickly become one of your favorite summer grilling dishes.
I am so excited to share this recipe with you because it includes the very best tip about grilling vegetables, something I do at least a couple times a week all summer. Ready for it? It couldn't be easier but makes a world of difference. Start adding citrus zest to your veggies before you toss them on the grill. It will seriously take your veggies to another level. And it couldn't be easier. Just toss the veggies, some olive oil, citrus zest and juice, and your favorite spices to a ziploc bag about 20 minutes before you are ready to grill. Then grill everything as you normally would. It adds this amazing fresh and bright flavor and I can't wait to try more combinations. This lemon pepper zucchini is delish and I am dreaming of all the other combinations I can try - broccoli with orange zest and soy sauce, cauliflower with lime zest and chili powder, asparagus with lemon zest and rosemary, you get the idea!
Grilled Lemon Pepper Zucchini

- 2 tbsp. olive oil
- 4 U zucchini, cut into planks
- 1 U lemon, zest and juice
- 2 tsp. black pepper (adjust to taste)
- 1 tsp. salt
- 1 tsp. Italian seasoning

Place the zucchini in a bowl or Ziploc bag. Add the olive oil, lemon juice, lemon zest, pepper, salt, and Italian seasoning and toss to get everything coated. Let rest on the counter top for 20 minutes.
When ready to grill, heat the grill over medium heat. Add the zucchini directly onto the grill. Cook for 3-5 minutes on each side until grill marks appear and zucchini easily lifts from grill. Roughly chop and serve.
