Grilled Caprese Foil Packets filled with tomatoes, red peppers, zucchini, and artichoke hearts and then topped with fresh mozzarella, basil, and balsamic vinegar make the most delicious vegetarian main dish or side.
If it includes fresh mozzarella I am pretty much going to say yes every time. I just can't get enough of this creamy, soft cheese and don't even get me started on burrata. Whenever I see it on display at the grocery store with fresh summer tomatoes and basil, I immediately start thinking about how I can incorporate it into dinner. So last week when I was already planning on grilling some veggie packs for dinner, it only seems natural to turn them into Caprese veggie packets with my favorite cheese, fresh basil, and plenty of balsamic vinegar.

- 2 cups cherry tomatoes, halved
- 2 U zucchini, sliced
- 1 U red pepper, sliced
- 1 U red onion, sliced
- 1 cup canned artichoke hearts, chopped
