I absolutely love butternut squash but I hate how long it takes to prepare. That was until I learned you could cook it on the grill in about ten minutes. Toss it with olive or coconut oil and your favorite spices, and you end up with amazing, caramelized squash that makes a delicious side dish.

Grilled Butternut Squash

Cut the squash in half lengthwise and scoop out the seeds. Then cut into slices, about 1/4 inch thick. Toss with olive oil, thyme, salt, and pepper.
Place on a medium high grill for about 5 minutes per side or until tender.
