These egg mugs have a secret ingredient - cottage cheese! Before you go running for the hills (unless you happen to love cottage cheese, than we're good), this recipe doesn't taste anything like cottage cheese. When combined with the eggs and cooked, it make everything creamy, cheesy, and delicious plus it adds some extra lean protein to the recipe. Personally I have been adding green onions to all my egg dishes lately and loving the flavor, but you could add any veggies. For harder veggies, microwave them first until tender. Then whisk in the eggs so that everything cooks evenly. My favorite way to eat these yummy eggs? Piled on an English muffin or toast with sliced tomato and some thinly sliced deli ham. Yum.
