One of my all time favorite indulgent Carnival or fair snacks are German Potatoes, which basically are thick cut freshly fried potato chips, usually tossed with paprika, salt, pepper and served with a side of malt vinegar. They are absolutely delicious, especially if you are someone who loves salt and vinegar chips. This is my weight watchers friendly version of freshly “fried” potato chips, which I cook in the oven. They are great as a snack or side dish and you can easily mix up the spices to change the flavor profile. I also love them with garlic and rosemary yum!

Ingredients

  • 2 U russet potatoes, cut into thick potato chip slices with skin
  • 2 tbsp smoked paprika
  • salt and pepper
  • cooking spray

Directions

  1. Preheat the oven to 450 degrees and place a baking sheet inside as the oven preheats. This step is extremely important to make sure the chips come out crispy. The baking sheet should be hot and you should hear the potatoes sizzle when you spread them out on the sheet.
  2. Place the potatoes in a large mixing bowl and spray with cooking spray to coat. Add salt, pepper, and paprika and toss together until evenly coated.
  3. Spread potato chips in a single layer across the baking sheet.
  4. Cook potatoes for between 25-30 minutes (or until they get crispy). Flip the potatoes after about 15 minutes of cooking.
  5. Serve on their own with malt vinegar drizzled on top or as a side dish.
