My ten year old self would hate today’s blog post. She would open her mouth in horror that I was eating peas without being forced to, and be doubly aghast that I was encouraging others to join me. But my ten year old self had never had fresh English peas, fresh out of the shell, sweet and delicious. Fresh English peas are starting to pop up at the grocery stores and farmers markets in my neighborhood and I couldn’t be happier. Normally when you buy Fresh peas, they come in the shell, although I think they may sell fresh peas at Trader Joe’s as well already taken out of the shell. If they are in the shell, you simply pop them out and can enjoy them raw or quickly boiled for 2-3 minutes. Any longer and they turn to mush. The points plus value for this recipe only counts the pea and feta mix because it can be used so many ways, but if you add the french bread Crostini, add 1 point for most breads. This recipe could also work without fresh peas, but I would recommend frozen peas not canned peas.

Ingredients

  • 1 cup fresh English peas
  • 1/4 cup reduced fat feta cheese
  • 2 tbsp nonfat plain Greek yogurt
  • 1 tbsp. fresh mint
  • 2 tsp. lemon juice

Directions

  1. Bring 2-3 cups of salted water to a boil. Meanwhile remove the peas from their shell. When the water is boiling, add the peas and boil for 2-3 minutes. Remove immediately and rinse with cold water to stop the cooking.
  2. Add everything to a food processor and pulse until just combined.
  3. Serve on toasted baguettes to make crostini, use it as a dip or spread on sandwiches, serve it over pasta, get creative!
